Air Fryer Vegetables


Ingredients 

  • 1 cup broccoli florets
  • 1 cup cremini mushrooms large ones halved or quartered
  • ½ cup thinly sliced carrots about two small-medium, peeled
  • 1 small zucchini sliced
  • 1 small red bell pepper roughly diced
  • 1 small-medium red onion roughly diced
  • 2 teaspoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 1 tablespoon grated parmesan cheese optional; or grated Romano cheese
  • salt and ground black pepper to taste

Instructions 

  1. Prep: Pre-heat air fryer for 5 minutes on highest temperature setting.
  2. Season: Combine vegetables with olive oil, vinegar, garlic, Italian seasoning, garlic powder, salt and pepper. Place in hot air fryer basket (cook in two batches if necessary).
  3. Cook: Air fry at 390°F for 7-8 minutes. Shake basket, sprinkle vegetables with parmesan cheese. Air fry for 3-8 more minutes, until tender to your liking.
