Ingredients:
- 5 oz Penne pasta
- 4 oz Feta cheese block
- 1 tbsp Olive oil
- ½ lb Grape tomatoes
- 2 tsp Minced garlic (more or less to taste)
- Salt to taste
Instructions:
- Preheat the air fryer and start cooking pasta if not already cooked. Reserve about ¼-½ cup of water once the pasta finishes.
- Use an air fryer safe dish that will fit in your air fryer basket. (I used a 8.5 inch tin foil cake pan). Any pan should work fine.
- Place the oil in the bottom of the dish.
- Halve the tomatoes and add them to the dish. Add the garlic and salt. Stir everything together to coat the tomatoes in the oil and garlic.
- Move the tomatoes to the side of the dish and place the feta block in the middle of the dish. Move the tomatoes to be in a single layer around the feta block of cheese.
- Air fry at 320 °F for 8 minutes, or until the feta is slightly browned and tomatoes are roasted.
- With a spatula, gently press down on the feta cheese and tomatoes to break apart. Air fry for 3 more minutes at 380 °F, or until everything is roasted and melty to your liking.
- Stir the cheese and tomatoes together until well combined. Combine with the penne pasta. You may need to transfer to a separate dish. If the cheese and tomato mixture is too thick for your liking, take some of the reserved pasta water and add a little to the bowl until pasta reaches desired consistency.
- Serve with fresh basil and enjoy!
