INGREDIENTS:
- 4 flour tortillas
- 150-gram cooked rice
- 200-gram green beans cooked
- shredded rotisserie chicken
- 2 tablespoons burrito seasoning
- 1 tablespoon olive oil
- 1 small onion
- 2 cloves garlic
- 8 tablespoon tomato salsa
- 1 cup shredded cheese (optional)
INSTRUCTIONS:
- Cook the rice in your Instant Pot
- Clean the green beans and cook for 10 minutes then drain
- Finely chop the onion and mince the garlic
- Take a cast-iron skillet and heat to medium-hot. Add olive oil before adding the onion and garlic. Stir continuously until soft this takes about 4 minutes. Then add the shredded chicken. Stir again then add the taco seasoning and about ¼ cup of water. Let it cook through for 5 minutes. Let it cool
- Take a tortilla and take one to two tablespoons of rice and put it in the middle of the tortilla
- Scoop 2 tablespoons of chicken mixture on top of the rice
- Add a tablespoon of green beans and 2 tablespoons of tomato salsa. Fold your burritos and wrap them with tin foil. Preheat the Air Fryer to 400℉. Add the burritos in the Air Fryer and warm for 5 minutes. Serve immediately.
