Air Fryer Salad with Marinated Chicken and Shaved Brussels Sprouts


Ingredients:

  • 2 tablespoons olive oil, plus more for the dressing
  • 3 ½ cups shaved Brussels sprouts
  • Salt and pepper
  • 1 to 2 boneless, skinless chicken breasts, marinated in the seasonings/marinade of your choice
  • ½ pitted and skinned avocado, cubed
  • ½ small cucumber, chopped
  • 2 pitted dates, chopped
  • 1 handful of chopped red onions and/or scallions
  • ¼ cup Parmesan cheese shavings
  • Balsamic glaze or chili oil

Instructions:

Preheat an air fryer to 400°F. 

In a large bowl, drizzle the olive oil over the Brussels sprouts and toss to combine. Place in the air fryer and cook for about 5 minutes or until desired crispness. Transfer to a serving bowl, season with salt and pepper and set aside. 

Add the marinated chicken breast(s) and cook until just cooked through, 10 to 12 minutes. Cut the meat into desired size and place on the Brussels sprouts. 

Scatter the avocado, cucumbers, dates, onions and/or scallions and cheese over the top and drizzle with balsamic glaze and olive oil to taste. Enjoy!
