Mediterranean Rice


Ingredients

  • 2 tablespoons Olive oil or avocado
  • ½ Sweet onion – finely diced
  • 3 cloves Garlic – crushed
  • ¾ teaspoon Turmeric
  • ¼ teaspoon Cumin
  • ¼ teaspoon Paprika
  • 1¼ teaspoons Salt to taste
  • 1½ cups Basmati rice – rinsed and drained
  • 2¼ cups Water
  • 2 tablespoons Cilantro – finely chopped
  • 2 tablespoons Parsley flat-leaf – finely chopped
  • ¼ cup Pine nuts – toasted

  1. Finely dice the sweet onion and garlic.
  2. Chop the fresh parsley and cilantro.

Cooking instructions

  1. Heat a skillet or medium-sized pot over medium heat and add the olive oil. Sauté the minced garlic and chopped onions for 2 to 3 minutes until softened.
  2. Stir in the spices and seasoning, and cook for 1 minute until fragrant and slightly toasted.
  3. Pour in the water and mix soften onion and spices together with a wooden spoon, scraping the bottom of the pot to release any bits stuck on the bottom.
  4. Add in the rice and continue to cook on medium heat until boiling, then reduce to a simmer and place the lid over the pot. Simmer for 20 minutes until the water has absorbed into the rice and it becomes fluffy.
  5. Remove the pot from the heat and add the chopped cilantro, parsley, and toasted pine nuts to the cooked rice.
  6. Finish the fragrant yellow rice recipe with a squeeze of lemon juice and serve with your favorite protein or fish dish for a complete meal.
