Minted Lamb Kebabs with Lemon & Garlic Couscous


Ingredients

  • 100g couscous
  • 120g lamb kebabs
  • 1 tbsp olive oil
  • 4 tbsp tzatziki
  • 100g cherry tomatoes, (optional)
  • 1 small bunch fresh parsley, (optional)

Instructions

  1. Heat the couscous in a pan with 200ml boiling water for 1 min. Turn off, cover and leave for 20 mins.
  2. Meanwhile, preheat grill to high. Place the kebabs onto a foil-lined tray. Grill until charred but slightly pink in the centre, 6-8 mins depending on your grill.
  3. Fluff the couscous up with a fork, then add 1tbsp olive oil. Serve with the lamb and a dollop of tzatziki. TIP: Fold a bundle of chopped parsley and 100g cherry tomatoes through the couscous to make it go further.
