Ingredients
- 100g couscous
- 120g lamb kebabs
- 1 tbsp olive oil
- 4 tbsp tzatziki
- 100g cherry tomatoes, (optional)
- 1 small bunch fresh parsley, (optional)
Instructions
- Heat the couscous in a pan with 200ml boiling water for 1 min. Turn off, cover and leave for 20 mins.
- Meanwhile, preheat grill to high. Place the kebabs onto a foil-lined tray. Grill until charred but slightly pink in the centre, 6-8 mins depending on your grill.
- Fluff the couscous up with a fork, then add 1tbsp olive oil. Serve with the lamb and a dollop of tzatziki. TIP: Fold a bundle of chopped parsley and 100g cherry tomatoes through the couscous to make it go further.
