Ingredients:
- 1 package (1.6 lb.) Smoked Turkey Drumettes
- 1 tbsp. olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp. ground cumin
- 1/2 cup chicken broth
- 1/2 cup barbecue sauce
- 2 chipotle peppers in adobo, minced
- 4 tsp. packed brown sugar
- 8 corn tortillas, warmed
- 1 cup shredded lettuce
- 1 ripe avocado, peeled, pitted and sliced
- 1 tomato, diced
- 4 radishes, thinly sliced
- 1/2 cup sour cream
- 2 tbsp. finely chopped fresh cilantro
- Lime wedges, for serving
Instructions:
- Add turkey drumettes to saucepan; pour in enough water to cover. Bring to boil; cover and reduce heat to low. Simmer for about 2 hours or until meat is moist and tender. Remove turkey from cooking liquid and reserve 1 cup of liquid. When cool enough to work with, shred turkey with 2 forks, discarding skin.
- Heat oil in large skillet set over medium heat; cook onion, garlic and cumin for 3 to 5 minutes or until onion is soft. Add reserved cooking liquid, broth, barbecue sauce, chipotle peppers and brown sugar; bring to boil. Add turkey to skillet. Reduce heat to medium-low; simmer for 15 minutes or until sauce has thickened.
- Serve turkey in tortillas. Top with lettuce, avocado, tomatoes and radishes. Dollop sour cream over top and garnish with cilantro. Serve with lime wedges. Serve with your favourite taco toppings, such as shredded cabbage, finely chopped pineapple or crumbled feta cheese.
